With around 15 million American adults and 5.9 million children having a food allergy new legislation has been implemented to protect the public of Illinois from food safety failures.
From January 1st, 2018 (enforced from July 1,2018) all certified food protection managers working in Category 1 restaurants must complete ANSI-approved allergen training.
These certificates must be kept on premise, so a health inspector can view them upon request.
