The Missouri Department of Health & Senior Services (DHSS) does not require manager certification. However, the person in charge (PIC) must demonstrate knowledge in foodborne illness prevention, HACCP principles, the Missouri Food Code, and the ability to train and supervise staff.
Becoming a Certified Food Protection Manager (CFPM) can serve as proof of this knowledge, and the Missouri DHSS lists Learn2Serve by 360training as an accepted provider.
Additionally, certification is required in certain cities and counties:
- City of Independence: Requires a permitted manager to be on duty at all times.
- City of Jefferson: Requires each PIC to become a certified manager.
- City of Columbia/Boone County: Requires completion of an approved training program.
- Cape Girardeau County: Requires advanced food safety certification for managers, assistant managers, involved owners, and at least one absentee owner.
- Clay County: Requires managers or PICs to be certified within 60 days of hire.
- Jefferson County: Requires a certified food safety manager on-site at all times.
- Kansas City: Requires either a certified food manager on duty at all times OR 80% of staff to hold food handler cards. Note that 360training is NOT accepted in Kansas City.
