State  Regulations

Every food establishment must have a manager on duty or a designated Person in Charge during hours of operation.

The Person in Charge is required by law to be a Certified Food Protection Manager. That person must be able to demonstrate their knowledge of food safety standards.

One option for that demonstration is to become a Certified Food Manager, by taking an approved Certified Food Protection Manager (CFPM) Training Course and passing an exam

What does a proctored exam mean?
