In addition to food safety training, managers must also be accredited in additional training on allergen awareness. Again, the training course must be ANSI approved. A certificate must be kept in the restaurant at all times and made available to health inspectors upon request. Inspectors will ask to see the certificate as it is an item on the inspection report.
